What a sadya is
Kerala's food is built on coconut, curry leaf, spice and seafood, and is famously strong for vegetarians. The sadya is the state's set-piece feast: a full meal served on a banana leaf, built around rice with sambar and rasam, and a run of side dishes, curries and pickles laid out around the edge of the leaf, finished with payasam, a sweet milk-based dessert. It is traditionally associated with the Onam harvest festival but is served in Kerala restaurants and homestays throughout the year, and is one of the easier ways to eat well as a vegetarian anywhere in India.
